In May 1933, The Leatherneck, the magazine of the Marine Corps Institute, used the word "jarheads" to refer to US Army soldiers, not Marines. Eleven months later, in April 1934, the same magazine used the word for a Marine. Somewhere in that one-year window, jarhead transferred from the Army to the Marines. Merriam-Webster's dictionary entry on "jarhead" notes that the Mason jar and haircut explanations were probably developed long after the fact.
