🥒 Zucchini 1 pc
🧅 Shallot 1/2 pc
🍊 Orange 1 pc (grate zest first, then cut the flesh)
🍊 Fresh orange juice 50 ml
🥣 Vegetable broth 100 ml
🍷 White wine 50 ml
🍈 Capers 50 g
🌿 Thyme
🍬 Sugar 1 tsp
🌱 Olive oil

🌶️ Pepper Start by making cuts along the back and belly of the fish, separating two fillets. Remove the abdominal and backbone bones. Season with salt and pepper. Finely chop the shallot, grate the orange zest, peel off the white pith, and chop the orange flesh. Squeeze the fresh juice into a cup, chop the capers, and separate the thyme leaves from the stems. Use a vegetable peeler to slice the zucchini and carrot into thin tagliatelle strips. Sauté the shallot in olive oil until transparent. Add the capers, orange zest, and flesh. Add thyme and wine, allowing the liquid to evaporate. Pour in part of the broth and orange juice. Reduce the liquid, then add some salt and sugar. The sauce should be a balance of sweet, salty, and tangy. Pan-sear the bream fillets on both sides in olive oil. In a separate pan, lightly sauté the carrot and zucchini strips in a bit of olive oil for a couple of minutes. Season with salt and pepper. Place the semi-cooked fish fillets on top of the vegetables. The vegetables should sit under the fish! Pour the sauce and remaining broth over the fish and veggies. Simmer for 10 minutes until the vegetables are al dente (tender but not overcooked). Place the fish fillet on a plate, add the vegetables on top, and drizzle with the sauce.
