RECIPE: - 4 large sweet potatoes - 1 lb ground turkey or ground beef - 1 can black beans - 1 can corn - 1 package taco seasoning - 1 tbs paprika - 1 tbs chile powder - 1 tbs salt - 1 avocado - 1/4 cup salsa - any other toppings you’d like!! 1. Start by slicing the sweet potatoes into disks, cutting the large ones in half 2. Place spread out on cookie sheet and season with olive oil, paprika, chile powder and salt 3. Place in oven and bake at 425 for 20-25 or until soft 4. Dice 1 white onion and place in pan 5. Cook 1lb of ground turkey or ground beef with onion and season with taco seasoning 6. Once sweet potatoes are cooked, top with ground beef, beans, corn, salsa and avocado 7.
