FOR THE HOMEMADE NO CHURN ICE CREAM ⅔ cup sweetened condensed milk (about ½ a 14 ounce can) ½ tablespoon vanilla bean paste (or 1 teaspoon vanilla extract) ¼ teaspoon kosher salt 1 cup cold heavy cream FOR THE COATING 1 ½ cups semisweet chocolate chips 3 tablespoons coconut oil ½ cup rice krispies, lightly crushed 1. In a medium bowl, add sweetened condensed milk, vanilla paste, and salt. Whisk to combine. 2. In the bowl of your stand mixer fitted with the whisk attachment, add the cold heavy cream. Whip on medium-high speed until stiff peaks form. (The cream should stand up when the beater is lifted.) 3. Pour the condensed milk mixture into the bowl with the whipped cream. Using a rubber spatula, carefully fold the milk into the whipped cream until fully combined. Be careful not to deflate the cream. 4. Using a tablespoon, scoop ice cream mix into ice cube molds until all has been added. 5. Cover with plastic wrap and freeze for at least 3 hours or preferably overnight. 6. When ice cream is done freezing, pop it out of the molds onto a baking sheet. Place the baking sheet in the freezer to keep the ice cream frozen solid. 7. Add chocolate chips and coconut oil to a microwave safe bowl. Microwave in 30-second intervals, stirring in between, until melted and smooth. Add crushed rice krispies and stir to combine. 8. Line a baking sheet with parchment paper. Working with 1 ice cream cube at a time, dip it into the melted chocolate, coat on all sides, then place it on the lined baking sheet. Continue with remaining cubes. 9. Set baking sheet back in the freezer for at least 10 to 20 minutes to re-harden before storing in a freezer-safe container.
