Make cheese sauce: * In a saucepan, melt butter over medium heat. * Stir in flour and cook 1 minute (to make a roux). * Add milk, while whisking. * Stir in cheese, salt, and pepper until melted and smooth. 4. In a large bowl, mix the cooked macaroni, cheese sauce, and beaten egg (helps bind the cups). 5. Spoon the mixture evenly into each muffin cup. Press down slightly to pack. 6. Sprinkle extra cheese and breadcrumbs on top for a crunchy crust. 7. Bake for 15–20 minutes, or until golden and bubbly. 8. Let cool in the tin for 10-15 minutes before removing.
