Easy slow cooker sirloin tip roast  This meal was absolutely phenomenal! The meat fell apart easily, the flavours, on a bed of mashed potatoes, was the ultimate meal!  Easy slow cooker version but this can definitely made the same way in the oven same way!  Recipe below ⬇️  2-4lb sirloin tip roast  1 large onion  1 shallot  2 -3garlic cloves  6-8 whole mushrooms  2 tablespoons tomato paste  1/2 cup dry red wine  3-4 cups beef broth  1 tablespoon Dijon mustard  Salt  Fresh thyme or 1 tablespoon dried  Slurry to thicken gravy: 2 tablespoons cornstarch mixed with 3 tablespoons water  **salt and pepper your roast well both sides. To a cast iron pan or frying pan add some butter and sear the meat on medium high until browned on both sides and set aside **to the same pan add some more butter, onions and shallots, garlic sauté 1-2 minutes then add the mushrooms and sauté for another couple minutes. Add salt. Add in tomato paste, mix well then add in wine let that reduce 1-2 min **get your slow cooker add another small knob of butter, and add in the veggies then put in the sirloin tip and fill with broth until just above the meat .  *add in the tablespoon of Dijon , thyme and let that cook 5-6 hours in the slow cooker or 3-3.5 hours in oven at 350*F  with lid on. Usually 40 min per pound for oven.  **once the meat falls apart and shreds easily, (either remove from pot and shred with forks or directly in pot using fork and tongs) add in 2 tablespoons of cornstarch in a water slurry. (Add 2 tablespoons cornstarch with 3 tablespoons water and mix well) or you can use the club house beef gravy mix , add that in and it will thicken beautifully.  **serve on a bed of mashed potatoes  #sirloinsteak #sirlointiproast #roastdinner #roast #SlowCookerRecipes
