FAJITA CHICKEN SWEET POTATO NACHOS For two: For the chicken & veggies - 260g diced chicken breast - packet fajita seasoning - splash water - 1 diced onion - 1 diced red & green pepper For the potatoes - 500g sweet potatoes - tsp aromat, smoked paprika & garlic granules For the tomato salsa - half diced red onion - handful diced tomatoes - handful fresh parsley/ coriander - pinch salt - juice of half a lemon Other toppings: - 60g reduced fat cheese - 100g fat free greek yoghurt - 1-2 crushed garlic cloves - 1 mashed avocado Thinly slice the potato into even discs, then add to a baking tray, add the seasonings & some spray oil, cook for 20-25 mins at 190 until softened and cooked through. For the chicken slice this, and cook in a frying pan with spray oil, once it has some colour add the fajita seasoning and a splash of water and continue cooking until it’s chicken is cooked through and then set to one side. In the same pan. Add the veggies and cook until they have softened. In a bowl mix together the tomato salsa ingredients. In another bowl mix the garlic and Greek yoghurt. Once the potatoes are cooked, spoon over the cooked chicken, veggies and the grated cheese, then pop this back in the oven for 5-10 minutes until the cheese is melted.
