Laminated inside + baked into the crust this might be one of my most unhinged loaves yet… 👉 would you try this or is this too far? ⸻ 🧾 Chocolate Chip Cookie Sourdough Loaf Dough: 100g sweet stiff starter 500g bread flour 300–320g water 60g sugar 40g butter 10g salt 5g vanilla ⸻ Cookie Dough: 95g all-purpose flour 125g bread flour 5g salt ¼ tsp baking soda ½ tsp baking powder 1 egg 125g sourdough discard 5g vanilla 113g butter (cold, cubed) 100g brown sugar 100g white sugar 340g chocolate chips ⸻ 🥣 Dough Method: Mix dough + bulk ferment (4–6 hrs) with stretch & folds Add chocolate chips during stretch & folds 3 + 4 Laminate chunks of cookie dough during shaping Shape + cold proof overnight ⸻ 🍪 Cookie Dough Method: Mix dry ingredients together In a separate bowl, whisk egg, vanilla, and sourdough discard In another bowl, mix butter + sugars until crumbly Add chocolate chips Mix in dry ingredients, then add wet ingredients Mix until dough comes together Portion or break into chunks and chill (at least 2 hours) ⸻ 🔥 Bake: 450°F covered → 30 min Remove lid → add MORE cookie dough on top Bake 15 more minutes ⸻ crispy cookie crust + soft sourdough + chocolate in every bite 🤯 #sourdough #sourdoughbread #cookiedough #breadtok #chocolatechip
