Ingredients For the Cake: • 2 ¼ cups all purpose flour • 2 tsp baking powder • ½ tsp baking soda • ¼ tsp salt • ¾ cup (1 ½ sticks) salted butter • 1 ½ cups sugar • 2 tbsp vanilla extract • 2 tbsp vegetable oil • 3 large eggs • 1 cup buttermilk For the Frosting: • 1 cup (2 sticks) salted butter • 6 cups powdered sugar • 1 tbsp vanilla extract • 6 tbsp milk Instructions 1. Cupcakes: Preheat oven to 350°F (175°C) and line cupcake pan. Sift flour, baking powder, baking soda, and salt. In a separate bowl, beat butter and sugar until fluffy. Add vanilla, oil, and eggs one at a time. Alternate adding dry ingredients and buttermilk until just combined. Fill liners 2/3 full and bake 15 minutes or until a toothpick comes out clean. Cool completely. 2. Frosting: Beat butter, powdered sugar, vanilla, and milk until light and fluffy, adjusting milk for consistency. 3. Frost: Spread or pipe frosting onto cooled cupcakes.
