Cowboy Caviar 🫘🌽🥑🧅🫑🍅 recipe adapted from Spend with Pennies 💜 INGREDIENTS: one 15oz can black beans, drained & rinsed one 15oz can black-eyed peas, drained & rinsed 1/2 cup orange bell pepper, diced 1/2 cup red bell pepper, diced 1/3 cup red onion, diced 2 roma tomatoes, diced (use a paper towel to pat dry) 1 large avocado, diced 1 cup frozen yellow corn kernels, thawed 1/4 cup chopped cilantro tortilla chips for dipping DRESSING: 1/3 cup extra virgin olive oil juice of 1 lime 2 tablespoons red wine vinegar 1 teaspoon granulated sugar 1/2 teaspoon salt 1/4 teaspoon garlic powder 1/4 teaspoon black pepper INSTRUCTIONS: 1. In a large bowl combine beans, bell pepper, onion, tomato, avocado, corn and cilantro.  2. To a measuring cup add all of the dressing ingredients and whisk together until well combined. 3. Pour dressing over the bean mixture and toss well so that all ingredients are evenly coated.  4. Serve with your favorite tortilla chips. Can be enjoyed immediately and/or stored in the refrigerator.
