Easy recipe Makes: 8 Ingredients * 8 Medjool dates * 1/2 cup almond flour * 2 tbsp smooth peanut butter * 1 tbsp maple syrup * 1/4 tsp vanilla extract * Pinch of sea salt * 2 tbsp mini dark chocolate chips (optional) * About 3 tbsp melted dark chocolate * Sprinkles (optional) Directions 1. Slice the dates open, remove the pits, and gently smash them flat. 2. In a bowl, mix together the almond flour, peanut butter, maple syrup, vanilla extract, sea salt, and mini dark chocolate chips (if using) until a soft cookie dough forms. 3. Divide the cookie dough evenly among the 8 smashed dates (about 1 tablespoon each) and gently press into an even layer. 4.
