My favorite meal when I don't feel like cooking! I literally just take what I have in my kitchen, dump it into an oven-safe dish, and bake it. I prefer bone-in chicken for this recipe because it stays nice and juicy. Pat your chicken dry and season it with whatever seasonings you have in your kitchen. I usually go for a garlic, onion, and herb blend. If you have minced garlic or onion paste, you can add those too. I really enjoy this recipe because you can customize it to your liking and use whatever you have on hand. I like to drizzle my chicken with a little olive oil first to help the seasonings stick. For the vegetables, you can use whatever you prefer. Today I'm using fresh carrots, fresh green beans, and an onion. I cleaned and cut everything to my preferred size, drizzled the vegetables with olive oil, and seasoned them well. Spread the vegetables in the bottom of an oven-safe dish, then place the chicken on top. Pour in a little chicken broth to create some extra juices while everything bakes. If you'd like, sprinkle a little more seasoning over the chicken to help it develop a nice golden color. I normally cover my dish with foil while it bakes, but I actually ran out this time, so I baked it uncovered. It still turned out delicious, and the chicken got a little more golden on top. ‼️Bake at 350°F for about 1 hour, or until the chicken is cooked through, golden, and the vegetables are tender. Once everything is done, carefully drain the drippings into a separate bowl. Whisk together a cornstarch slurry and stir it into the drippings to make a gravy. Pour the gravy back over the chicken and vegetables, then place the dish under the broiler for a few minutes. This thickens the gravy, crisps up the chicken even more, and brings everything together perfectly.
