First make the strawberry soak. Cook the strawberries with a splash of water until soft, then blend until smooth. Set aside 50g for the cream and keep the rest for soaking. 2. To make the cream, combine the soft cheese, FAGE Total 5% yoghurt, icing sugar, and 50g of strawberry purée until smooth and creamy. 3. To assemble, start with a layer of chopped strawberries, then a layer of sponge fingers soaked in the strawberry purée. 4.
