Ingredients: 100g hot espresso 50g dutched cocoa powder 350g water 100g active starter 5g vanilla 30g brown sugar 10g salt 500g bread flour This makes one massive loaf (1,300g ish) or 2 minis! Baking instructions: I open bake but you can use a dutch oven. Bake in a dutch oven on 450F lid on for 20 minutes, lid off 22 minutes until it reaches a temp of 210F internally. For minis, it’s about 30 minutes of bake time- 15 min lid on, 15 min lid off!
