Cut sweet potatoes into medallions and season with garlic powder, paprika, salt, and pepper. Spray with olive oil and bake for 20 minutes. 2️⃣ While they bake, cook 97% lean ground beef in a skillet over medium heat. Add onion + taco seasoning. 3️⃣ Once the beef and potatoes are done, layer it all up with sweet potatoes first, then beef, black beans, cheese, and jalapeños. 4️⃣ Bake for 5 more minutes just enough for that cheese melt 🫠. 5️⃣ Top with your faves like guac, pico, light sour cream, cilantro, and a squeeze of lime.
