INGREDIENTS: for the dough: 230g warm milk 2 eggs, room temperature 75g unsalted butter, softened 50g sugar (omit for babies) 7g instant dry yeast 450g bread flour 1 tsp salt for the garlic butter & cheese filling/glaze: 150g unsalted butter (divided: half softened to spread inside the dough, and half melted to brush over the top after baking) 5-6 cloves garlic, finely minced 2 tbsp fresh parsley, finely chopped 2 tbsp chives, finely chopped 200g shredded mozzarella METHOD: 1. Mix the dough ingredients in a bowl, then knead into a soft dough and cover to let it rise. 2. Blend melted unsalted butter with plenty of garlic, chives and parsley. 3. Once the dough doubles in size, roll it out flat. Spread the garlic butter evenly and sprinkle a generous layer of mozzarella right on top. 4. Roll it up tightly, slice into even pieces, and bake at 180°C for 20-25 minutes until golden brown and bubbly. 5. Spread the remaining garlic butter on top as a glaze.
